Oven Roasted Potatoes



6 potatoes, peeled and cubed
1/2 small onion, chopped
2-3 tablespoons reserved bacon fat
salt, to taste
black pepper, to taste
paprika, to taste

Preheat your oven to 375 degrees F. Melt the bacon fat in the bottom of the roasting pan. Add the potatoes and onions and give it a good toss to coat. Cook for about 20-30 minutes, stirring every few minutes to prevent sticking. Season with salt, pepper and paprika and toss again.


Serves 4-6

Looks really tasty!

I know it's a different dish, but here's how we like to make potatoes on Sunday:
Wash the potatoes thoroughly, don't peel. Cut in half lengthwise. Sprinkle the skin side with salt (don't be afraid to over-salt, the excess with fall off). Put into the oven on the wire rack, app. at 325F. Bake until golden brown. To serve, cut the flat side open and put a slab of butter inside. Enjoy

Is there anything that can be used as a substitute for the bacon fat? Like extra virgin olive oil?

Sure, you could definitely use olive oil or butter, etc.
