Since the Orthodox Church, especially the Coptic Orthodox Church, had the greatest interaction with Islam, I was wanting to know if any of you could provide a list of works by Orthodox Christian apologists who interacted and defended the beliefs of the Church against Islam?
I am aware of the writing of St. John of Damascus but I was curious as to whether or not any other Church Fathers or even recent Orthodox believers wrote against Islam?

I am a student of Islam and plan to study it in detail.
However, *some* Muslim hostility toward Christians does perplex me.
I am currently researching and writing a paper on the topic of Muslim - Christian interaction in Egypt: Now and at the rise of Islam.

He is a bit controversial, cause his public criticism of Islamic teachings embarrasses the Church. He resigned to save the Church the trouble his association of the Church causes.
He has a lot of writings and video taped TV shows where he targets soft spots of Islam.
It is a shame the struggles of the coptics in Egypt. Even though the vast majority of egyptians have no ill will towards Christians, the small minority of extreamists can cause such hardship.
