I trust God to know what combinations are best for the human body, and to give us the scientific curiosity and mental ability to concentrate smaller benefits into effective medicines.
Even "traditional" medicines don't usually use just bare herbs, barks, and seeds. You steep them in water to make tissanes and poultices, you steep them in alcohol to make tinctures, etc. (side note, alcohol distillation probably came about for medicinal reasons)
God gives us the raw materials. And the smarts to figure out how best to use His gifts to soothe and heal.

Do you trust man diluting chemicals down until they're effectively nonexistent and then smacking it with a stick?
Man's finite wisdom (very finite in the case of homeopaths) and fiddling is quite capable of turning beneficial chemicals into water as well.

It's still man who has figured out how to extract the chemicals that work from the herbs, barks, seeds, etc. God gave us a brain to figure these things out.
I'll grant that some natural extract have a better combination of chemicals. But, they also have a wider range of side-effects because the medication in them isn't very specific. For instance, vancomycin came from a fungus in the soil somewhere in southeast Asia. But, it didn't become the killer antibiotic it was until man extracted it, identified it and synthesized it. Eating the dirt would have done precious little to stop nasty infections.
