Defining the word atheism as "a belief that a god or gods don't exist, insofar as they might," is not a useful definition.
How about -- "The lack of belief in a Supreme Being/Deity"?

So an atheist is one who believes in 0 gods --- is that correct?

Not good enough.
What if one believes in a pantheon of deities, where each one is equal to the other, and none stand out as 'supreme'?
I think the only definition for the word 'atheism' that respects all of its parts (prefix, root word, and suffix) is: The belief that there are no god or gods.
