1. The model found in the Hebrew government- I believe if we had capital punishment where they did, it would be an ideal of sorts, but Paul says that all goverments are appointed by God [Rom. 13]. So His having them lessening use of capital punishment for witchcraft & adultery, for example, might be another expression of God's mercy.
Also, the Old Testament gave detailed instructions regarding tribal land ownership. None of these rules are relevant outside of Israel, because God had made no such agreements with us Gentiles.
Likewise, while the Gentiles in the faith have never been obligated to observe Jewish health & dietary codes, they are still highly recommended, considering their source. How much unnecessary death would have been spared, if the rest of us would have learned to wash our hands BEFORE the discovery of germs?
2. The spiritual fulfillment of physical models- Large portions of Leviticus were devoted to descriptions of various animal sacrifices. Jesus was our sacrifice, once and for all. Because of this, we will never need to learn these precise set of skills. They might have some metaphorical importance for us, today, but resuming literal sacrifices is shown in our Bibles to be blasphemous, just as Moses' snake was [2Kings 18:4].
The Sabbath is shown to have this same quality in Hebrews 4:9, 10 & Romans 8:1-6. Now He wants seven out of seven, instead of one out of seven, but it more than fulfills "one out of seven."
The rest of the Ten Commandments have this feature, as well, notably stated in Matthew 5:17-43.
