Spicy Split Pea Soup

Spicy Split Pea Soup

I just made this homemade soup, that's just out of this world....and thought to share the recipe:

Spicy Split Pea Soup (serves 4)

1 onion, peeled & chopped
2 Tbs unsalted or salted butter
2 boxes (10 oz each) frozen peas-and-carrots blend, thawed
1 can (14.5 oz) chicken broth
1/4 tsp. ground ancho or chipotle chile pepper

In medium saucepot over medium heat, cook onion in butter 5 min., or until soft and translucent. Add thawed peas & carrots, chicken broth and ground ancho chile pepper; bring to a boil. Remove soup from heat. In food processer or blender, carefully puree hot pea mixture to desired consistency. Sprinkle with chopped fresh oregano and serve with a dollop of sour cream, if desired. (I use salt to taste after it's been pureed.)

Wait til you take a bite...it's sweet at first, then the pepper kicks in. HOO! And get this: it's only 5 (FIVE!) ingredients. Try it.
