Here's my recipe.

1 big can (or approx 4 cups) cooked garbanzo beans, liquid reserved
2-3 Tbsp lemon juice
2-3 Tbsp sesame tahini
1-2 Tbsp olive oil
2-3 cloves garlic, minced
1-2 tsp ground cumin and ground coriander, each
salt to taste

Process all ingredients in food processor until desired taste and consistency, adjusting spices and adding garbanzo cooking liquid as needed.

To make a chilpotle hummus, add 1-2 chiplotle peppers and approx 1 Tbsp of adobo sauce, omit ground coriander and use cilantro leaves instead.

There are a lot of Lebanese who are Maronite Catholics. These people excel in making hummus.

What is CHILPOTLE?

I've heard of Eggplant hummus - get it all the time at good old Trader Joes.

Do you have a recipe for Eggplant hummus?

Well, okay. That would be fine to move it to there...

Chilpotle is a type of dried chile. You can find it in the ethnic section of most larger cities' grocery stores - it's Mexican. The kind I'm talking about is a canned chile in a tomato-y sauce. TJ's sells a chilpotle hummus now, but I much prefer my recipe!

I've not heard of eggplant hummus. Is it anything like Baba Ganoush? I bet a quick Internet search would yield you a good recipe, though.
