Since most people in here have multiple (or very many) reference and study Bibles, I thought this would be fun. If you had to choosejust one study Bible, which one would it be?

I would choose the Thompson Chain Study bible. All of the helps and charts are in the back of the bible. The text has no markings or raised letters for the references. The references and subject headings are in the margins so the bible can be treated as just a reading bible if you wish.

You're right, it's a tough question considering the plethora of choices we've been blessed with. I'd probably prefer the NASB Study Bible (which has the adapted notes of the NIV Study Bible), mostly for the NASB, its overall content, and all those wonderful cross-references, which a lot of study Bibles seem to skimp on these days.
And you said "just one", so I'll stand by my choice, but I'd guess you're an NRSV New Oxford Annotated kind of guy, and I probably should put in a plug for the ESV Reformation Study Bible - a couple of other exceptional choices, IMHumbleO.

English Standard Version Reformation Study Bible, edited by R.C. Sproul. The translation is literal, Christological, not gender-neutral, and based on up-to-date texts.

Any of the Hebrew Greek Key Word Study Bibles (KJV, NASB, NIV). I always like to refer to commentaries when I study, and find study Bibles severely lacking in information. But, I find the superb lexical aids in the last half of this Bible more useful than the limited commentary in any of the study Bibles I have. Along with the superb lexical aids, there is a great chain reference in it, and there are some key commentary items listed at the bottom of some pages. But, the bulk is wound up in the lexical aids at the back of the book. This study Bible comes in KJV, NASB and NIV.
The second best study Bible I have is the Thompson Chain Reference Bible. It comes in KJV, NASB, NIV (at least). It has a robust set of links to other like passages and is a very helpful study Bible.
Of the commentary focused study Bibles, I like the Nelson Study Bible and the NIV Study Bible. I have found the commentary in these to be the best.
Blackaby and MacArthur are good as well.
I do not like the Dake, Scoffield, or Lucado Devotional (NCV) Bibles. I also don't recommend any of the topical study Bibles. It's not that the topical studies are bad, they just are less helpful.
I have looked at the ESV Reformed Study Bible, which is nice, but has too much of a focus on Calvinism, which I am not a big fan of. I consider myself leaning toward Calvin's writings and commentaries (he was a superb exegete), but don't like the commentary by later Calvinistic writers, which this study Bible seemed to focus on. I do love the ESV, though.

I guess I am into digital too much now. I use Bibleworks.
It is more exegetical in nature with the helps that come with it and lacks in commentary, save for commentary which deals with grammar or textual criticism, or if you count the NET bibles notes.
I honestly don't have anymore paper study bibles, the last one I had was the NASB inductive study bible. Now I use mostly bible works and I have different bible versions on my phone also. I really don't see the need as of right now to obtain a paper study bible.
I do have some paper bibles at the house, the ESV, KJV, 1611 1st ed. KJV fac from Nelson, 1526 Tyndale NT w/orig spell., NIV. But none of them are study bibles.
Maybe one day I will grow weary of my toys, but until then I will enjoy them.
