Well, basically fundamentalism is "going back to the fundaments". But as almost no one can agree just what the "fundaments" of a certain philosophy are, it mostly comes down to "I am right, just because I am right". Yes, that is arrogant.

"Fundy atheist" is a wierd term, relatively young. It's not really universally defined. Obviously, it's usually used as a put-down. I utilize it outside the usual definition of fundamentalist:

Fundamentalist Atheist: An atheist who does not consider the meaning of arguments for or against atheism, but instead mocks and insults believers for their positions. Usually someone incapable of debating in favor of an atheistic position unsupported.

Basically, an atheist with no conception of why one should or should not be an atheist.

It's a useful term, if relatively silly.

I would define a fundamentalist atheist as an atheist who is willing to use an argument to cause people to lose faith regardless of whether the argument is true or valid.
Are you also saying that fundamentalist Christians are willing to use arguments to cause people to accept Christianity regardless of whether the argument is true or valid?
