I make a batch of instant mashed potatoes. Then I add an egg, garlic, onion, some flour , sometimes cheese , sometimes corn & fry.

I use the food processor to shred my potatoes, and add salt, pepper, egg and flour. Deep fry in oil until golden brown. Serve with sour cream...yummy.

Sorry I don't have the exact measurements, but my granny taught me how to make them, and she never measured anything. The closest I can get you is to make sure you use enough eggs and flour to hold them together. Also, squeeze out as much water from the potatoes as you can. I sometimes use garlic pepper in place of the salt & pepper, and add a little parsley.

"" will become famous soon enough
This one looks good

3 raw potatoes (grated)
1 tsp. onion
1 tsp. salt
2 eggs, unbeaten
2 tbsp. flour

Bake like other pancakes on hot greased skillet. Spread a little and bake until golden brown. Good with applesauce.

Got it here.
