True- the centrifical forces would counteract the gravitational forces.
it probably wouldn't make them long and thin as both forces (gravity and centrifical force) would be spread over a huge volume/area.

I was being somewhat tongue in cheek here..

its like this:-

the heyday of the really big dinosaurs was the cretaceous period of between 140 - 65 million years ago. based on the calculation of 4 hours per billion years, the length of the day was at most only 38 minutes (less than %3) shorter during that period.

Given that the centripetal force at the equator makes such a negligable difference to the weight of an object as compared to weiging the object at one of the poles (as also evidenced by the earth being almost perfectly spherical), this tiny variance in velocity would have played a totally insignificant role if any in the dimensions of the dinosaurs.

However to be serious, one didn't expect it to be fast eneugh to make much of a noticeable difference, and so the answer would lie elsewhere.

A serious question is how would have been able to get to be up 2+ feet large when the theoretical max size of an insect would be around 1 foot, due to constraints on muscle mass, exoskeleton strength, and air-breathing functions?

(Size limits might be off, but it seems that there are prehistoric fossils of insects that exceed the size deemed possible for insects to reach because of the relationship between the forementioned constraints)

CAn anyone throw some light on this?

I think (and I'm not absolutely sure) that what you are refering to might be a giant type of prehistoric dragon fly that had a wingspan of up to 2 feet. Given that the bulk of the insect would be its abdomen and thorax, I would say that this would be possible.

I also seem to recall that the atmosphere had a 35% oxygen level at that time which might also help explain how they could have gotten so large.

OK that makes sense... It's been a long time since one has read about prehistoric insects in any detail

That also helps... if that's a greater amount from what the currrent oxy level is.
