Reps: 155 (power: 0) | | | Melting Moments This is one of our Christmas traditions.......I've always made these 'melt-in-your-mouth' cookies at Christmas time, but for the last 5 or 6 years my son took over this particular task, so now we call them Michael's Melting Moments..... Cream together:
350g butter
125g icing sugar (powdered sugar) Sift together:
350g cake flour
125g custard powder
Combine the 2 mixtures, stirring as little as possible but getting it all mixed through. Form into wall-nut sized balls. Place on cookie tray and flatten each one slightly with a fork. Bake 180 C for 10 - 15 mins. Let them cool on tray for a few minutes before transferring to cooling rack. (Don't over bake, they are best when still a very light colour and they literally do 'melt-in-your-mouth'

Hmmmm, the things we take for granted! Custard powder is made from cornflour, milk solids, and sometimes dehydrated powdered egg. I have always made custard from scratch with eggs, milk/cream and sugar until very recently, but I've always used custard powder in baking. It is in the desserts / baking section of our supermarkets in Australia, I have no idea where you'd find yours! Good luck! |
