My father had 1 kidney most of his life--lived to be 81 ad he never watched his diet and at one point was around 400 lbs--he was over 6 ft tall. He, however, did not smoke or drink. It was his heart that got him. But everyone is different.
I was a dialysis tech for 20 years and the loss of your last kidney is not a death sentence if you can go on dialysis. It's not fun, but is doable. I've known people who were on it for over 40 years. Did dialysis on preemies (that one was 3#, most of it water!!) all the way up to 96 years old. Do the best you can, and trust God to help you through whatever comes.

Need urgent prayer. I only have one working kidney and have been good at my diet. But the last 2-3 days my remaining kidney has been aching badly. Not sure if its another kidney stone or its dying too now. I'm getting a bit scared because of obvious reasons if you lost your last kidney. >.<
