			<content:encoded><![CDATA[<div>Thanksgiving isn't that far off and in my family, we all pitch in to help prepare the meal. Each of us takes charge of one dish and I think it can make the whole experience a lot of fun.<br />
<br />
Anyway, I've been perusing some recipes for this Thanksgiving and I thought I'd ask everyone: what's your favorite Thanksgiving recipe? Is it something you just sort of improvised? Is it a family classic?<br />
<br />
One of my favorites is my grandmother's apple cake:<br />
<br />
<ul><li>2 cups of sugar</li>
<li>2 eggs</li>
<li>1 cup of oil</li>
<li>1 tsp of vanilla extract</li>
<li>2 1/2 cups of flour</li>
<li>2 tsp of baking powder</li>
<li>1 tsp baking soda</li>
<li>1 tsp salt</li>
<li>1 tsp cinnamon</li>
<li>4 cups of diced fresh apples</li>
<li>1 cup of nuts (pecans or walnuts are what we usually use, but pick whatever you like)</li>
<li>One 6 oz package of butterscotch chips (optional)</li>
</ul><ol style="list-style-type: decimal"><li>Preheat oven to 350 degrees.</li>
<li>Beat the sugar, eggs and oil together until they are well-mixed.</li>
<li>Add the vanilla and then add and mix the flour, baking powder, baking soda, salt and cinnamon.</li>
<li>Then mix in the apples and nuts.</li>
<li>Spoon the batter onto a greased sheet pan (or bundt).</li>
<li>If you want to add the butterscotch chips to this cake, sprinkle them over the batter.</li>
<li>Bake for 45 minutes and when its done, let it cool in the pan.</li>
</ol>This a staple with my family and we always have it at Thanksgiving. It's great as a desert, but it also holds up well as a coffee-cake, making it great as left-overs too.</div>
